Broiled Rainbow Trout (Gluten-free, No soy/dairy/grains)

I LOVE making whole fish and I love rainbow trout but haven't had it in years... since I was in middle school, to be exact. Fresh-caught trout used to be a staple in our house until I managed to get a bone lodged in my tonsil (something that could only happen to me, lol). The process of having it removed at the dentist office left me a bit traumatized but never took away my craving for that luscious, juicy fish. When I saw fresh rainbow trout at the fish market, I just had to grab it and bring it back into my repertoire. It was as tasty as I remembered!!

This dish is soooo easy!! Simply season the trout, stuff the cavity with fresh herbs and lemon, broil and eat!

Easy-peasy, oh-so-tasty, and gluten-free!

I served my trout with a crisp, tangy honey-mustard broccoli slaw. The zing and crunch of the veggies was the perfect compliment to the rich, fatty rainbow trout (GOOD fat)!

Give the trout a quick rinse with water. Pat it dry inside and out.
Broil on the second rack for 15 minutes until the skin just turns crispy. The flesh should be opaque and juicy.

To eat the trout on-the-bone, pierce the flesh with your fork along the mid-line and GENTLY pull the meat along the bones toward the bottom of the fish.

Broiled Rainbow Trout (Gluten-free, No soy/dairy/grains)

INGREDIENTS:

  • 2 whole rainbow trout, cleaned (about 1.5 lbs total). (Make sure the eyes are clear and not cloudy. That indicates a fresh fish!)

  • 2 T olive oil

  • salt and pepper to taste

  • 1 lemon, sliced

  • fresh dill sprigs

  • fresh oregano sprigs

DIRECTIONS:

  • Adjust oven rack to second level from the top and preheat oven to high broil (about 500 degrees F).

  • Rinse the trout and pat dry inside and out.

  • Place the trout on a parchment lined baking sheet.

  • Brush both sides of the fish and the cavity with the olive oil.

  • Salt and pepper inside and out (be liberal with the salt).

  • Fill the cavity with lemon slices, dill and oregano sprigs.

  • Place a few lemon slices on the top of each trout.

  • Broil for about 15 minutes (longer if you trout are really big) until the skin is crispy... but not burnt, of course!

  • Remove the herbs and lemons from the cavity (Careful... They will be hot!).

  • Plate and enjoy!
