'CHEESY' WITCHES HAIR PASTA WITH MOZARELLA EYES (gluten-free, soy-free)

Here's a fun gluten-free Halloween dish for kids and adult-kids alike! All the taste of gooey mac & cheese made spooky-black... plus, it's plant-based, grain-free and can be dairy-free if you swap out the mozzarella used for the eyes.

Is there no end to the fun things you can do with #shiratakinoodles?? Apparently, not! Here, I used Miracle Noodle Organic Spinach Shirataki Spaghetti... which probably would have been spooky enough on their own, but why only go half-way?? I coated these with #squidink. You could also use black food coloring.

That ooey, dark sauce? #dairyfree Core and Rind Cashew Cheesy Sauce warmed with a bit more squid ink. Soooo easy... and tasty!

Prep the eyes by cutting mini mozarella balls in half and topping each with a thin slice of olive.

Cook the shirataki noodles as directed to remove moisture.

Add 1 T of squid or cuttlefish ink (or a few drops of black food coloring) and stir to combine. Set the noodles aside.

Over medium-low heat, warm some Cheesy Sauce until bubbling.

Reduce heat to low, stir in about 1 T of the squid/cuttlefish ink (or drops of food coloring).

Mix to thoroughly combine.

Add the noodles back to the pan and stir your cauldron to coat.

Transfer the pasta to your serving bowl and top with the cheese eyes.

Dig in!!
