Simple Shrimp Salad (Gluten-free, Soy-free, Dairy-free, Grain-free)

There’s nothing quite as refreshing and tasty than a mound shrimp salad. Old Bay seasoning kicks of the flavor of this classic shrimp salad. Pile it onto sliced tomatoes and avocados as I did, scoop it over lettuce, or simply serve it with crackers... you can't go wrong!


I used a tin of salad shrimp from the pantry, but chopped freshly boiled shrimp would be awesome and lend a chunkier texture.

The veggies can easily be substituted to go with what is in your fridge. No green onions? Chop up some red onion or shallots. No radishes? Dice up a tomato and toss it in. Easy peasy!


Simply Shrimp Salad (Gluten-free, Soy-free, Dairy-free, Grain-free


INGREDIENTS:

  • 1 4 oz can salad shrimp (tiny shrimp), drained

  • 2 radishes, diced

  • 2 green onions, diced

  • 1/2 cucumber, seeds removed and diced

  • 1 tsp Old Bay seasoning

  • 1/4 cup gluten-free, soy-free mayo (I use Sir Kensington's brand)

  • 2 T dijon mustard

  • 2 tsp dried dill or 1 T fresh (chopped)

  • Juice from 1/2 lemon

  • Salt and pepper to taste


DIRECTIONS:

  • Add all ingredients into a mixing bowl.

  • Stir gently to combine.

  • Chill for at least 30 min

  • Enjoy!
