Scallops never cease to amaze me! I mean, how can something so decadent tasting be so easy to cook?? I mean, they are SO easy that they don't even need a recipe! Just give them a sear in a hot pan and eat! I served these over a chilled cauliflower rice and veggie salad, but they also go well over sauteed spinach, with your favorite pasta, or just as they are!

While your non-stick skillet it heating over high, remove the tough adductor muscle from each scallop, dry the scallops with a towel or paper towel (this will give them a better sear), and salt them lightly.

If your fish monger has not already done so, remove the tough adductor muscle from each scallop.

Just give the adductor muscle a gentle pull to remove it.

While your non-stick skillet it heating over high, remove the tough adductor muscle from each scallop, dry the scallops with a towel or paper towel (this will give them a better sear), and salt them lightly.

Sear the scallops for 2-3 minutes per side and serve! You want the outside to have a nice crust but the inside should still be tender and creamy. Do NOT over-cook these beauties or you'll think you're chewing on a bike tire!

DIRECTIONS:

  • Heat a nonstick skillet over high heat.

  • Rinse the scallops, remove the adductor muscle from each, pat dry and season with salt.

  • When the pan is hot, add 2 T butter (or non-dairy butter) and allow it to melt.

  • Add the scallops to the hot butter in a single layer so they are not touching each other. Do not crowd the pan or the scallops will steam instead of developing a nice crust!

  • Cook for 2-3 minutes per side. Do not move the scallops around the pan while they are cooking. Leave them alone so they can get crusty.

  • Serve and enjoy!
