Artichoke Hummus (gluten-free, dairy-free, soy-free, grain-free, AIP-friendly)
This bold and bright homemade artichoke hummus is bursting with flavor and makes snacking on AIP easy peasy! Even your non-food-challenged friends will come back for more. If you love artichokes and hummus you will surely love this!
This artichoke hummus is super simple to whip up, since it only has four ingredients. The trick is to make sure that you really, really, totally, thoroughly drain the artichokes. Squeeze as much water from them as you can to get the smoothest, silkiest texture.
I like to serve this artichoke hummus with assorted veggies and AIP-friendly cassava chips.
Artichoke Hummus (gluten-free, dairy-free, soy-free, grain-free, AIP-friendly)
INGREDIENTS:
1 14oz can quartered artichoke hearts, drained thoroughly
1 clove garlic
1/4 cup avocado oil
2 T fresh lemon juice
DIRECTIONS:
Drain the artichokes as much as humanly possible and add to food processor.
Peel the garlic clove and add to the artichokes.
Pulse the garlic and avocado in the food processor until they are roughly chopped.
Add the lemon juice and avocado oil. Process until the hummus is smooth and creamy.
