BACON-WRAPPED CHEESY WHOLE (ROASTED) CAULIFLOWER

Finding it hard to get excited about veggies? Wrap them in bacon and stuff them with cheese! 🤣 This delicious roasted whole cauliflower is deliciously crispy on the outside, while creamy and cheesy on the inside. Even your veggie-snubbing eaters will be begging you to make this again!😁 (gluten-free, of course!)

You could slice this up and serve it as a fun side dish. But, it's so tasty and tempting that you'll probably end up digging into it as a main!


HINT: Let the boiled cauliflower cool for a few minutes so that it is easier to handle when you insert the cheese and wrap it with bacon.


To wrap, place one strip of bacon on top of the cauliflower and tuck the other end under the bottom of the head. Next, do the same on the opposite side of the cauliflower head. Then, go back to the first side and place a strip of bacon slightly overlapping the first. Continue alternating sides and overlapping bacon slices until the entire head of cauliflower is covered.

BACON-WRAPPED CHEESY WHOLE (ROASTED) CAULIFLOWER


INGREDIENTS:

  • 1 whole cauliflower

  • 7 ounces of cheddar cheese, cut into sticks

  • 2 8-ounce packages of sliced bacon


Garlic Butter Sauce:

  • 1/2 cup butter (or butter-flavored coconut oil)

  • 1 tsp garlic powder

  • salt to taste



DIRECTIONS:

  1. Remove the leaves and outer portion of the stem from the cauliflower.

  2. Fill a large pot with enough water to cover the cauliflower and bring it to a boil.

  3. Boil cauliflower head for 10-12 minutes until a knife easily pierces the center.

  4. In a saucepan over medium/medium-low heat, combine the butter, garlic power, and salt.

  5. Stir often until melted and smooth.

  6. Carefully remove cauliflower from the hot water and place it stem-side up on a baking sheet. Let it cool a tad so it's easier to handle.

  7. Press sticks of cheddar cheese into the cauliflower cavities.

  8. Flip the cauliflower so it is stem-side down on the baking sheet.

  9. Smother it in melted butter mixture.

  10. Wrap the cauliflower with strips of bacon tucking the ends under the bottom of the cauliflower (secure with toothpicks, if needed).

  11. Bake at 320F for about 1 hour until bacon is cooked through and cheese is melty.

  12. TRY to let it rest a bit so you don't totally scorch your mouth like I did.
