Keto Chicken Divan (Gluten-Free, Low-Carb, Grain-Free)
This cheesy, comforting Chicken Divan skips the carbs but keeps all the flavor. Made with tender chicken, crisp broccoli, and a luscious, gluten-free cheese sauce, this casserole is perfect for cozy dinners and meal prep alike.
🛒 Ingredients:
For the Chicken:
1 ½ lb chicken breast, sliced into strips
1 tsp garlic powder
1 tsp paprika
1 tsp salt
For the Broccoli & Rice Layer:
4 packages Miracle Rice (grain-free)
4 cups broccoli florets, steamed (about 3 minutes in the microwave)
½ medium onion, diced (optional)
For the Cheese Sauce:
2 tbsp butter
2 tbsp arrowroot flour
1 cup chicken bone broth
1 cup sour cream
1 tsp garlic powder
1 tsp salt
1 tsp curry powder
1 tbsp lemon juice
1 ½ cups shredded cheddar cheese
½ cup shredded parmesan cheese
Topping:
½ cup shredded cheddar cheese
¼ cup shredded parmesan cheese
½ cup pork rind crumbs

1. Cook the Chicken:
Season chicken strips with garlic powder, paprika, and salt.
Heat a pan over medium heat and cook the chicken until just cooked through, about 4-5 minutes per side. Set aside.
2. Make the Cheese Sauce:
In a medium saucepan, melt butter over medium heat. Whisk in arrowroot flour to create a roux, cooking for about 1 minute.
Slowly whisk in chicken bone broth, letting the mixture thicken slightly.
Stir in sour cream, garlic powder, salt, curry powder, and lemon juice.
Reduce heat to low and gradually add cheddar and parmesan cheeses, stirring until melted and smooth. Remove from heat.
3. Assemble the Casserole:
Preheat oven to 350°F (175°C) and grease a 9x13 baking dish.
