Bourbon Bacon Relish (Gluten-free, soy-free, grain-free, dairy-free)

INGREDIENTS:

  • 1 ½ pounds (roughly one package) thick-cut bacon, cut into 1-inch pieces

  • 1 yellow onion, sliced

  • 2 garlic cloves, minced

  • ⅓ cup date syrup (pure maple syrup works, too)

  • ¼ cup dark brown sugar

  • 2 teaspoons apple cider vinegar

  • ½ teaspoon cayenne pepper (optional)

  • ¼ cup bourbon

  • Salt to taste

DIRECTIONS:

  • In a medium skillet, cook bacon, stirring occasionally, until done and on the verge of crispy, approximately 10 minutes. Remove to a paper towel-lined plate.

  • Reduce heat to medium-low. Add onions and garlic to the pan with the bacon grease and cook the onions until the onions caramelize... about 4-5 minutes.

  • Add remaining ingredients, stir well. Simmer on low heat for 10-15 minutes, stirring occasionally, until everything starts to thicken and turn shiny "Jammy".

  • Return the bacon to the pan, turn off the heat, stir well and allow everything to sit and thicken for a few minutes. Salt to taste.

  • Store in an airtight container in the refrigerator until ready to serve.

  • Enjoy!
