Easy Roasted Tomatoes (Gluten-free, soy-free, dairy-free)
It's amazing how something as simple as roasting tomatoes for a few minutes brings out sooooo much more flavor! Ripe campari tomatoes are sliced in half, topped with olive oil, balsamic vinegar, italian seasonings, and crushed gluten-free crackers. I then roasted them at 400 degrees F for 20 minutes... you'll smell the goodness when they're done!
Almost any type of tomato will work for this recipe. If you use beefsteak or another larger variety, you will probably need to increase the baking time 5-10 minutes.
These roasted tomatoes are an easy side dish... and the leftovers (if you have any) are amazing on salads, sandwiches, or on a fork. :)
Easy Roasted Tomatoes (Gluten-free, soy-free, dairy-free)
INGREDIENTS:
8 campari or plum tomatoes (Substitute 1 container of cherry tomatoes, or 4 larger variety tomatoes)
1/4 cup olive oil
3 T balsamic vinegar
2 T italian seasoning
2 T bread crumbs
Salt and pepper to taste
DIRECTIONS:
Cut the tomatoes in half.
Place cut-side up in an oiled baking dish.
Top with remaining ingredients.
Bake at 400 degrees F for 20 minutes.
Remove from oven and allow to cool for a few minutes (this intensifies the flavors even more).
