No-Flour Beer-Cheese Brat & Sauerkraut Soup (Gluten-free, Soy-free, Grain-free)

As a Wisconsin-girl, I expect a fantastic beer cheese soup whenever I have it. Of course, it has to be gluten-free... being quick to make is a plus, too!


This recipe meets all of those requirements and then some. Tangy sauerkraut and slices of snappy bratwurst bathing in a rich, cheesy broth with a hint of beer. No need for croutons when you have cheddar popcorn!

Melt the butter and add the cheese powder to make a roux.

No-Flour Beer-Cheese Brat & Sauerkraut Soup (Gluten-free, Soy-free, Grain-free):


INGREDIENTS:

  • 1/2 cup butter

  • 1/2 cup cheddar cheese powder (I use Anthony's Gluten-Free Cheddar Cheese Powder)

  • 2 cups chicken stock or bone broth

  • 1 cup milk or dairy-free milk (I use coconut milk)

  • 6 oz gluten-free beer

  • 8 oz shredded mozzarella or cheddar cheese

  • salt to taste

  • 1/2 cup sauerkraut

  • 1 bratwurst, cooked and sliced

  • Popcorn for garnish

  • Sliced green onion tops and/or red chili flakes for garnish


DIRECTIONS:

  • In a large saucepan melt butter over low heat. Slowly whisk in cheddar cheese powder until smooth. Cook 5 minutes.

  • Gradually add broth to flour mixture while continuously whisking. Continue to whisk and add the milk. After that add the beer while continuously whisking.

  • Continue to cook over medium heat while continuously whisking until soup thickens. Stir in shredded cheese until melted. Simmer until hot.

  • Add the sauerkraut and sliced bratwurst. Simmer until both are warmed through.

  • Serve immediately garnished with popcorn.
