No-Flour Beer-Cheese Brat & Sauerkraut Soup (Gluten-free, Soy-free, Grain-free)

As a Wisconsin-girl, I expect a fantastic beer cheese soup whenever I have it. Of course, it has to be gluten-free... being quick to make is a plus, too!
This recipe meets all of those requirements and then some. Tangy sauerkraut and slices of snappy bratwurst bathing in a rich, cheesy broth with a hint of beer. No need for croutons when you have cheddar popcorn!
No-Flour Beer-Cheese Brat & Sauerkraut Soup (Gluten-free, Soy-free, Grain-free):
INGREDIENTS:
1/2 cup butter
1/2 cup cheddar cheese powder (I use Anthony's Gluten-Free Cheddar Cheese Powder)
2 cups chicken stock or bone broth
1 cup milk or dairy-free milk (I use coconut milk)
6 oz gluten-free beer
8 oz shredded mozzarella or cheddar cheese
salt to taste
1/2 cup sauerkraut
1 bratwurst, cooked and sliced
Popcorn for garnish
Sliced green onion tops and/or red chili flakes for garnish
DIRECTIONS:
In a large saucepan melt butter over low heat. Slowly whisk in cheddar cheese powder until smooth. Cook 5 minutes.
Gradually add broth to flour mixture while continuously whisking. Continue to whisk and add the milk. After that add the beer while continuously whisking.
Continue to cook over medium heat while continuously whisking until soup thickens. Stir in shredded cheese until melted. Simmer until hot.
Add the sauerkraut and sliced bratwurst. Simmer until both are warmed through.
Serve immediately garnished with popcorn.
