Roasted Bone Marrow - ie: "Meat Butter" (Gluten-free, dairy-free, soy-free, grain-free, AIP)
Rather than tossing marrow bones in a pot for yet another batch of bone broth, I decided to roast a few so I could pull out that rich, collagen-filled marrow and feel it melt on my tongue while that collagen soaked into my body. Much more fun than sipping broth! They remind me of eating escargot... yet so much richer and better for the body.
Roasted bone marrow is one of those things you've probably seen on a steakhouse menu but never think to make at home, but it's sooooo easy!! Rest assured, despite tasting and looking downright sinful, it’s actually really good for you. These marrow bones were seasoned with salt, garlic, parsely, and olive oil, and then roasted in a 400 F oven for 15 minutes. That's it!
Considered a delicacy in many parts of the world, bone marrow is the rich substance found in the center of bones. Many traditional cultures revere marrow as a medicinal food. Even the late Anthony Bourdain declared it as part of his death row meal!
Roasted Bone Marrow - ie: "Meat Butter" (Gluten-free, dairy-free, soy-free, grain-free, AIP)
INGREDIENTS:
1 lb beef marrow bones (approx 8 pieces)
1 clove garlic, minced
4 T avocado oil, divided
1 T dried parsley
salt, to taste
DIRECTIONS:
Preheat oven to 400 F.
Grease the bottom of a cast iron skillet with 2 T of the oil and arrange the bones in a single layer.
Season the bones with garlic, salt, parsley, and the remaining oil.
Bake for 15 minutes or until the sides of the marrow start to bubble (You do not want it to melt completely... melty, not melted).
Serve hot and enjoy! I recommend some crusty bread to sop up the liquid in the pan!
