Chocolate Chia Seed Pudding (Gluten-Free, Soy-Free, Dairy-Free)

This simple 6-ingredient chocolate chia seed pudding is packed with nutrients and works with any type of non-dairy/nut milk (or regular milk if you are able). Even better... it requires no cooking and comes together in a flash! Simply whisk everything together and refrigerate overnight.

Despite their tiny size, chia seeds are full of important nutrients. They are an excellent source of omega-3 fatty acids, antioxidants, and they provide fiber, iron, and calcium. When added to the milk, the chia seeds absorb liquid and expand in size to thicken the pudding.

I used Julian Bakery - Paleo Protein Powder chocolate flavor for my pudding. However, you could also substitute with regular cocoa powder. I love the natural sweetness of D'vash Date Syrup, but quality maple or coconut syrup also works well.

DIRECTIONS:

  • In a small mixing bowl, combine the chocolate protein powder, date nectar, cinnamon, and vanilla. Whisk to combine.

  • Working in small batches, add in the milk whisking to form a smooth paste.

  • Add the chia seeds. Mix to combine. Cover and chill for at least 3-5 hours (preferably overnight). If you can, give the mixture a stir after about the first hour to redistribute the chia seeds.

  • Serve chilled with your desired toppings such as shaved coconut, chopped walnuts, or fruit.

  • Enjoy!
