Yes, you read the title correctly. I said 'grain-free' bread! I'm not much of a bread person anymore (I lost my taste for it after going gluten-free years ago). BUT, when I was getting ready to roast a whole chicken, all I could think about was sinking my teeth into a soft, dreamy leftover chicken salad sandwich!

I realllllly dislike baking and working with flour so I was super excited to find a flourless bread! No kneading. No waiting for yeast to do it's thing. No punching down dough. Whew! Plus, it can make a small batch so I get rid of my craving without having 20 additional rolls to use up. Oh - and it only uses FOUR ingredients!

To store, place the rolls into a large ziplock bag and place in the refrigerator. You will want to separate the rolls using parchment paper so they do not stick together. Cloud bread can also be frozen. Thaw them in the fridge and then toast them lightly to remove excess moisture.

Easy Low-Carb Keto Cloud Bread (Gluten-free, soy-free, dairy-free, grain-free)


INGREDIENTS:

  • 3 large eggs at room temperature (separate whites and yolks)

  • 3 oz dairy-free room temperature cream cheese (regular works, too, if you can have it)

  • 1/8 tsp cream of tartar

  • 1/8 tsp salt


DIRECTIONS:

  • Preheat the oven to 300 degrees F.

  • Line a baking sheet with parchment paper and grease lightly.

  • In a mixing bowl, use an electric mixer on high speed to beat the egg whites and cream of tartar until stiff peaks form.

  • In a second mixing bowl, use the mixer to beat the cream cheese, egg yolks, and sea salt until smooth.

  • Gently and gradually fold the egg white mixture into the cream cheese mixture using a spatula. Carefully fold the ingredients to incorporate without breaking up the air bubbles in the egg white mixture.

  • Scoop the mixture into 6 circular disks on the parchment paper.

  • Bake for 25-35 minutes until golden. Keep a close eye on these if you go over 25 minutes because they can go from almost done to overly done very quickly.
