Easy Pork Loin Roast (Gluten-free, no soy/dairy/grains)

If you love bone-in pork chops, you will flip over this! Bone-in pork loin roast is one of those cuts that is guaranteed to impress everyone you serve it to. As a bonus, it is SUPER easy and requires to cutting, chopping, messy pan-searing or overnight marinating.
I use the low-and-slow method to cook the meat and then crisp up the crust at the very end by cranking up the oven to high. This ensures an almost foolproof tender, juicy roast that is cooked perfectly all the way through.
No need to get fancy with the rub. Salt, pepper and a couple of Sazon by Goya seasoning packets (found in the Latin or Hispanic section of most grocery stores, or on Amazon here) are all it takes to build a flavorful outside. The annatto spice in the Sazon gives the pork a gorgeous reddish-brown crust. (NOTE: You can simulate the Sazon seasoning by making your own blend of powdered cumin, coriander, garlic, annatto, and salt)
Be sure to let your roast rest for 15 minutes when finished. This time is needed to allow all of those yummy juices in the meat to redistribute themselves throughout. If you slice into the meat too early, all of those perfect juices will run out onto your cutting board and you will be left with dry, tasteless pork chops... No, you cannot simply pour those juices back over the meat. ;)
Slice cleanly midway between the bones to separate your chops. Plate, serve, and enjoy!
I served my chops with my simple but flavorful wild rice salad (also gluten-free, soy-free, and dairy-free).
Easy Pork Loin Roast (Gluten-free, no soy/dairy/grains)
INGREDIENTS:
1 (4 or 5-bone) bone-in pork loin roast (about 5 pounds)
Kosher salt and freshly ground black pepper
2 packets of Sazon by Goya seasoning
DIRECTIONS:
Preheat oven to 250°F and adjust oven rack to center position.
Season pork roast liberally with salt, pepper and Sazon seasoning.
Place pork on a parchment-lined rimmed baking sheet. Transfer to oven and roast until internal temperature reaches 140°F (about 2 hours). Remove from oven and tent with foil for a minimum of 15 minutes and up to 45 minutes.
Increase oven temperature to 500°F. Return roast to oven and cook until the exterior is brown and crispy (about 10 minutes). Remove from oven, tent with foil, and allow to rest for 15 minutes so the juices redistribute throughout the meat.
Carve the roast by slicing between each rib. Enjoy!
