Must-Try PERUVIAN GREEN SAUCE Aji Verde: Easy, Gluten-Free, & Dairy-Free!
Peruvian green sauce, also known as Aji Verde, is a zesty, vibrant, creamy blend of fresh cilantro, zesty lime, and fiery jalapeƱos.š So addictive that you'll stop politely spooning the sauce over each bite and just get right to dunking (so I've heard š¤).
Peruvian Green Sauce often contains cheese and sour cream or Greek yogurt, but I made some tasty substitutions with avocado, mayo, and nutritional yeast to keep it dairy-free and still keto.š I also traded half of the usual jalapeno with a big ol' dollop of aji Amarillo paste to give the flavor more depth (and heat)... and because I was too lazy to seed another jalapeno. š¤£
Lime juice adds a tangy brightness, cutting through the richness and enhancing the overall flavor profile. Garlic and a touch of salt round out the sauce, making it a well-balanced accompaniment.

INGREDIENTS:
1 cup chopped fresh Cilantro
1 JalapeƱo Pepper, seeded and chopped
1 ripe Avocado peeled and seeded
Juice from 1 lime
2 Garlic cloves, peeled
1/4 cup of Water
2 T of Avocado Oil
2 T of Mayonnaise
2 tsp of Nutritional Yeast
1/2 tsp of Salt
1 T Aji Amarillo paste (more to taste)
DIRECTIONS:
āļø Toss all ingredients in a blender, food processor, or immersion blender container and process until they are nicely blended and smooth.
