Quick Garlic-Buttery Shrimp Scampi (Gluten-free, dairy-free, soy-free)
The buttery garlic sauce in this scampi recipe is to die for! You are definitely going to want something on hand to mop up every last drop... bread... spoon... your fingers. :) Even better, this flavor-packed dish comes together in just 20 minutes using one pan and only a handful of ingredients.
Shrimp scampi can be served many different ways depending on what you are in the mood for. I like it as-is in a bowl so I can soak up the sauce with a piece of garlic bread (yes, more garlic). It's also great tossed with pasta, like the photo below, spooned over rice, or tossed with couscous.
Quick Garlic-Buttery Shrimp Scampi (Gluten-free, dairy-free, soy-free)
INGREDIENTS:
3 T buttery-spread such as Earth Balance soy-free, dairy-free (or butter if you can have dairy)
1 T olive oil
1 lb raw shrimp, peeled and deveined
3 cloves garlic, minced
Juice from 1 lemon juice
2 T white wine (I use pinot grigio)
1/4 cup parsley, minced
1/2 tsp salt (more to taste, if needed)
DIRECTIONS:
Melt the 'butter' and olive oil in a large skillet over medium high heat.
When the butter starts bubbling, add shrimp in a single layer and cook for 2 minutes. Flip the shrimp, add the garlic, and cook for another 2 minutes, stirring the garlic occasionally to help it cook evenly, until shrimp is pink and just turning opaque.
Add lemon juice, salt and white wine, using this liquid to scrape up any browned bits on the bottom of the pan (FLAVOR!!). Bring to a simmer and cook for 1-2 more minutes, until slightly reduced.
Remove from heat, stir in parsley. Adjust salt to taste. Garnish with lemon slices.
Serve immediately. Enjoy!
